6 Chicken Breast Halves
1 Onion
3 Eggs
1/2 cup Parmesan Cheese
Salt and Pepper
4 tbsp Parsely Chopped

Slice each chicken breast in half and pound thin
In a bowl combine eggs, salt, pepper, lemon zest, and parmesan cheese
Heat vegetable oil in a frying pan
Coat each breast with egg wash and dredge lightly in breadcrumbs
Fry quickly until it just turns golden brown
Drain on paper towels

Sauce
Sautee onion, parsely, garlic, onion , salt and pepper in oil
When fragrant, add 1 can tomatoes and cook for  5 minutes

Layer chicken breast and sauce in a glass pan
Set oven to 375Cook covered for 20 minutes and add mozarella then cook for an additional 5 – 10 minutes until mozarella is bubbly.

Ingredients

6 Cloves Garlic Whole
3 Cans Pastene Kitchen Ready Tomotoes
1 Can Contadina Tomato Paste
3 Carrots
2 Stalks Celery
1 Onion Peeled
1 cup White Wine
4 Regular Beef Ribs|
3 Hot Sausages  ( Par Boiled)
3 Sweet Sausages (Par Boiled)
2 Country Style Pork Ribs
2 cups Olive Oil
3 Bay Leaves
Pinch Baking Soda
Nonnas Meatballs

Heat Oil and Saute Garlic
Add Pork and Beef and Brown
Add Tomatoes, 1/2 Can Water ( washing Out Tomato Cans) Onions, Celery,  Carrot, Bay Leaves,  and Bring to A Low Boil
Add Sausages and White Wine and Reduce Heat to Low
Simmer for 2 1/2 – 3 Hours
Remove Meat and Add Meatballs
Add Pinch of Baking Soda and Stir
Simmer for Half Hour

Serve
