It was great to see all of you and your parents again tonight…..

I’m glad we all had the opportunity to sit down again and talk about the upcoming year….

Same three goals:

  1. Have fun
  2. Win together, lose together
  3. Be better basketball players at the end of the season than you were at the beginning of the season.

We will play again in the River Valley League, and will know how many games we will be playing once the league gets organized in a couple of weeks.

We’ll play in a couple of tournaments at least, like last year.

Our plan is to practice Tuesday and Thursday after school at MSMS. I need to confirm this with Dr Connors.  We will schedule most of our games on Sunday afternoon.

Will you be the 15 the 9????

2 lb Ground Beef and Pork
Add  1 1/2 Cups Breadcrumbs
Add 1/2 Cup Cheese
4 tbsp Chopped Parsley
1 Medium Onion Chopped Fine
2 Cloves Garlic Finely Chopped
3 Eggs
3 Tbsp ketchup

Combine and Roll into Meatball
Roll in Breadcrumbs
Drop Meatballs in Sauce

Cook for One Hour

3 Large Eggplants

Frying
6 Eggs
Italian Flavored Breadcrumbs
3 TBSP Grated Parmesan Cheese
Zest of ½ Lemon
Vegetable oil  in Deep Skillet Halfway

For the Sauce
½ Onion Small Dice
½ cup Olive Oil
15 Basil Leaves
1 Bunch Curly Parsley
1 sprig of Thyme
1 Clove Garlic
Salt and Pepper
2 Cans Kitchen Ready Tomatoes
Sale and Pepper
Pinch of Baking Soda
Dash Oregano

Assembly
4 TBS Melted Butter
Romano / Parmegiano Cheese
Shredded Mozzarella Cheese 12 oz
Peel and Fry Eggplants
Slice on Diagonal ¼” thick with Mandolin
On a Large Cutting Board Arrange in Layers with Paper Towels
Cover with another cutting board and Press with a Heavy Object
Let stand for a couple of hours
Combine all Ingredients
Add Bread Crumbs to a Plate
Preheat Deep Skillet to 350 and Add Oil
Dip Each Side of Eggplant in Egg Mixture and Lightly coat with Breadcrumbs
Cook Each Eggplant a minute each side, until Golden Brown
Shake off Excess Oil as you remove them and drain on Paper Plates

Make the Sauce

Heat Sauce Pan on High
Add Oil, Onion, Parsley and Basil, Garlic and Thyme and Saute for 2 – 3 Minutes until Fragrant
Remove Garlic Clove, Reduce to Medium High and Add Tomatoes, Rinsing Can with 2 tbs Water
Add Salt and Dash Oregano
Cook for 1-0 – 15 Minutes
Add End, Add Dash of Baking Soda

Assemble
Coat Bottom of Aluminum Pan with Melted Butter
Add Thin Layer of Sauce
Add This Sprinkle of Grated Parmesan
Fill all spaces with Eggplant, Cut if Needed
Add this Layer of Sauce with a Small Spoon
Add Mozzarella, and then Parmesan Cheese
Repeat with second and third layers, depending on size of pan
Press Eggplant in on Last Layer
Final Layer, Add Sauce Mozzarella and Grated Cheese
Bake at 350 for about an hour until middle is bubbly

Girls,

Girls…good weekend.

It’s becoming clear that all of the hard work we have been doing since October is starting to pay off.

Defensively, we are starting to better understand the concept of team defense…..you all did a much better job of stopping the ball early and double teaming, and adjusting the defense to stop the nearest threat.

Offensively, we are learning the concept of team offense, looking for an open person and taking what the defense gives you. I also thought the passing improved tremendously.

In both games, we didn’t get outplayed, we got outshot. We will be spending a lot of practice time from now on improving how we shoot.
